Chicken Soup with Noodles

Chicken Soup brings to mind an easy, simple comfort food. Whether it is a cold dreary day or I don’t feel well, this soup is quick and easy to put together and has a strong hearty flavor that hits the spots each and every time. I use celery, carrots, and onion in my soup, but the joy of chicken soup is being able to add or use whatever your favorite veggies are. Sometimes I will add red pepper flakes for a kick. I don’t think I’ve ever cooked two pots of chicken soup the same.

Cold Dreary Day or Sick Day Comfort Food

For this Chicken Soup, I took the leftover chicken carcass from the roasted chicken we had a few days prior and boiled it down to get a deep tasty chicken broth.

Once the chicken was boiled down I strained it through a mesh strainer and added the vegetables and chicken meat and let that cook down until the vegetables were tender and then added my noodles. Once the noodles reached the consistency I liked, it was ready to serve. It sounds a bit more complicated than it is, but it’s actually a simple soup to make and even better to enjoy.

I served my Chicken Soup with Noodles topped with shaved parmesan cheese. The salty nutty flavor of the cheese complemented the soup so well, I’ve decided to eat it this way from now on. Chicken soup, easy simple comfort food.

Chicken Soup with Noodles

Ingredients
  

  • 1 leftover chicken carcass
  • 8 Cups Water
  • 5 Carrots
  • 5 Celery Stalks
  • ½ Medium Onion
  • 1 tsp salt
  • 1 tsp pepper
  • noodles of choice
  • shaved parmesan cheese

Instructions
 

  • Place leftover chicken carcass into a large dutch oven pan and cover with about 8 cups of water. You may need to adjust the water based on the size of the chicken or pan.
  • Bring to a boil. Then turn the heat down to a lower setting to allow the chicken to simmer in the water, creating a rich broth. This usually takes an hour.
  • Chop or slice your vegetables into the desired size you want and place them to the side.
  • Drain the broth through a mesh strainer into a heat-resistant bowl or another pan. This keeps unwanted bones and pieces out of the broth.
  • Debone and remove the chicken meat to be used for the soup. Set aside and discard the bones and unwanted pieces.
  • Place the Large pan back onto the stove with the broth. Add in your vegetables and the chicken meat and bring to a boil. Then reduce heat and simmer until desired tenderness of your vegetables is reached.
  • Add Salt and Pepper to taste.
  • Add your noodles and cook until the noodles are soft.
  • Serve.
  • You can add shaved parmesan cheese, or croutons for a delicious added flavor.

I absolutely love, love, love pasta. I work at trying different methods of cooking pasta, along with various flavors to try. These Parmesan and Veggie Noodles are a new favorite. I had some veggies I needed to use up and threw this dish together the night I made Rosemary Pan Seared Scallops. The two went together so well.

The bold nutty flavor of parmesan cheese, the fresh crisp zucchini and carrot, mixed with butter, make these Parmesan and Veggie Noodles addictive and delicious. This recipe serves double duty as a full dinner in itself, or a side dish for chicken, seafood or steak. It’s simple, fresh and versatile.

Parmesan & Veggie Noodles

Ingredients
  

  • 1 lb Spaghetti Noodles ( or pasta of choice)
  • 5 oz Parmesan Cheese Block
  • 1 Medium Zucchini – shredded
  • 1 Medium Carrot – shredded
  • 6 Tbsp Butter
  • 2 Tbsp Wild Rosemary infused Olive Oil * Optional
  • Salt & Pepper to taste

Instructions
 

  • Cook pasta according to package directions.
  • While pasta is cooking wash and dry the zucchini and carrot.
  • Shred zucchini and carrot in a medium bowl and set to the side.
  • Grate/shred the block of Parmesan Cheese and add the bowl of veggies.
  • Once pasta is cooked, drain well. Do not rinse the pasta.
  • Keep or return the pasta to the pan it was cooked in.
  • Add the butter, the optional infused oil if desired and toss until butter is melted throughout the noodles.
  • Add the grated/shredded parmesan cheese and veggies and toss until mixed throughout the noodles evenly.
  • Salt and Pepper to taste.
  • Serve warm and Enjoy!

Creamy Homemade Mayonnaise

I’ve always used store bought Mayonnaise or Miracle Whip when I needed it for a recipe, potato salad or sandwiches. It’s not a common condiment I keep on hand anymore. However, the other day when I was making Easy Meat Roll-Ups for lunch, the recipe called for homemade mayonnaise. What-do-you-know!!! Five ingredients. A quick mix with an immersion blender and voila – Homemade Mayonnaise, just like that. Creamy Homemade Mayonnaise that’s fail-proof and healthy.

I wasn’t quite sure how oil, a whole raw egg, lemon juice, salt and dijon mustard was going to come out white and creamy looking. But that’s exactly what happened. And the taste??? The taste was fresh, light and delicious. Hands down, homemade mayonnaise is the way to go. I don’t believe I’ll be purchasing store bought Mayonnaise anymore.

Homemade Mayonnaise

Ingredients
  

  • 1 Cup Light Oil – I use grapeseed oil
  • 1 Whole Egg
  • 2 Tbsp Lemon Juice – fresh squeezed is best
  • ½ Tsp Dijon Mustard or 1 tsp dry mustard powder
  • ¼ Tsp Salt

Instructions
 

  • Add all ingredients for the homemade mayonnaise into a wide mouth Mason jar or large measuring cup.
  • Let the oil rise to the top.
  • Place the immersion blender at the bottom of the jar or measuring cup and blend.
  • Keeping the immersion blender at the very bottom, slowly tilt the immersion blender as the mayo emulsifies , to allow the remaining oil to blend.
  • Store unused portion in the refrigerator in an airtight container. Use within two weeks.
