Quick and Easy Tuna Salad
As an 8 year old and with my first cookbook, this was the very first recipe I remember creating. And often. This was especially a really quick and easy meal to enjoy during the hot summer months in the Texas heat. My mom always had canned tuna in the pantry, so this became a go to. It’s a quick inexpensive meat/protein to whip up.
Quick and Easy Tuna Salad
Tuna Salad stuffed Tomatoes
Ingredients
- 7 oz Canned Tuna in water
- 4 Large Stalks of of Celery
- ½ tsp Salt
- 4 Medium Tomatoes
- ½ Cup Mayonnaise or miracle whip – which I use
- 4 Large Lettuce Leaves
Instructions
- Finely chop the 4 stalks of Celery and put them in a medium mixing bow.
- Open the can of tuna and drain. Add to the mixing bowl with the celery.
- Add the salt and mayonnaise and mix well.
- Wash the tomatoes and dry well. Either cut a hole in the top and then cut a criss-cross along the top, or cut the tops off and scoop out some of the tomato. This allows room to stuff the tuna salad inside.
- Use a spoon to stuff the tuna salad into each tomato.
- Wash and throughly dry each lettuce leaf. Place a lettuce leaf on each serving plate.
- Place a stuffed tomato on each lettuce leaf.
- Serve and Enjoy!
Notes
If making ahead of time, chill the tomato and tuna salad separately. This will keep the stuffed tomato from being too runny/watery. When ready to serve, stuff the tomato.
I recommend changing up the stuffing using different meats. Grilled chicken or flank steak adds a delicious flavor. Or for a vegetarian dish you can use tofu or shredded carrots and broccoli as a substitute for the meat. Be creative.
