Chicken Soup with Noodles

Chicken Soup brings to mind an easy, simple comfort food. Whether it is a cold dreary day or I don’t feel well, this soup is quick and easy to put together and has a strong hearty flavor that hits the spots each and every time. I use celery, carrots, and onion in my soup, but the joy of chicken soup is being able to add or use whatever your favorite veggies are. Sometimes I will add red pepper flakes for a kick. I don’t think I’ve ever cooked two pots of chicken soup the same.

Cold Dreary Day or Sick Day Comfort Food

For this Chicken Soup, I took the leftover chicken carcass from the roasted chicken we had a few days prior and boiled it down to get a deep tasty chicken broth.

Once the chicken was boiled down I strained it through a mesh strainer and added the vegetables and chicken meat and let that cook down until the vegetables were tender and then added my noodles. Once the noodles reached the consistency I liked, it was ready to serve. It sounds a bit more complicated than it is, but it’s actually a simple soup to make and even better to enjoy.

I served my Chicken Soup with Noodles topped with shaved parmesan cheese. The salty nutty flavor of the cheese complemented the soup so well, I’ve decided to eat it this way from now on. Chicken soup, easy simple comfort food.

Chicken Soup with Noodles

Ingredients
  

  • 1 leftover chicken carcass
  • 8 Cups Water
  • 5 Carrots
  • 5 Celery Stalks
  • ½ Medium Onion
  • 1 tsp salt
  • 1 tsp pepper
  • noodles of choice
  • shaved parmesan cheese

Instructions
 

  • Place leftover chicken carcass into a large dutch oven pan and cover with about 8 cups of water. You may need to adjust the water based on the size of the chicken or pan.
  • Bring to a boil. Then turn the heat down to a lower setting to allow the chicken to simmer in the water, creating a rich broth. This usually takes an hour.
  • Chop or slice your vegetables into the desired size you want and place them to the side.
  • Drain the broth through a mesh strainer into a heat-resistant bowl or another pan. This keeps unwanted bones and pieces out of the broth.
  • Debone and remove the chicken meat to be used for the soup. Set aside and discard the bones and unwanted pieces.
  • Place the Large pan back onto the stove with the broth. Add in your vegetables and the chicken meat and bring to a boil. Then reduce heat and simmer until desired tenderness of your vegetables is reached.
  • Add Salt and Pepper to taste.
  • Add your noodles and cook until the noodles are soft.
  • Serve.
  • You can add shaved parmesan cheese, or croutons for a delicious added flavor.
