Cheesy deliciousness along with the sweet, salty tenderness of lobster. Divine!!
I used gluten free elbow noodles for my recipe. There was no difference to taste at all.

- Vegetable Oil
- Kosher Salt
- 1 lb Elbow Macaroni ( I used gluten free)
- 1 quart Milk
- 8 Tbsp Unsalted Butter, divided
- ½ Cup All-purpose flour
- 8 Oz. Extra-Sharp Cheddar, grated (4 cups)
- 12 Oz. Gruyere Cheese, grated (4 cups)
- ½ tsp Nutmeg
- ½ tsp Freshly ground black pepper
- 1½ lbs Cooked Lobster Meat
- 1½ Cups Fresh White breadcrumbs (Optional)
Instructions
- Preheat Oven to 375℉.
- Drizzle oil into a large pot of boiling salt water, and the pasta and cook according to directions on package, 6 to 8 minutes. Drain Well.
- Heat milk in a small saucepan, but don't boil it.
- Meanwhile, in a large pot, melt 6 tablespoons of butter and add the flour. Cook over low heat for 2 minutes, stirring with a whisk.
- Still whisking, add the hot milk and cook for a minute or two until thickened and smooth. Remove from heat.
- Add the Cheddar and Gruyere, 1 tablespoon salt, the nutmeg and pepper. Mix well.
- Add the cooked macaroni and lobster and stir well.
- Place mixture in a casserole dish or individual gratin dishes.
- Melt the remaining 2 tablespoons of butter and combine with the fresh breadcrumbs and sprinkle over the top of the Mac-N-Cheese. (optional step – especially if you desire gluten free)
- Bake for 30-35 minutes or until the cheese sauce is bubbly and the macaroni is browned on top.
