Egg Roll In a Bowl

Egg roll in a bowl is also a great starter recipe for beginner cooks or kids. Simply chop up half an onion, a red bell pepper and green onions, cook the ingredients and put all together in 20 minutes for a quick, simple dinner. Nothing beats that!

Ingredients
Egg Roll
- 1 Tbsp Olive Oil
- ½ Onion
- 1 lb. Ground Pork Sausage ( Or ground turkey sausage)
- 1 Red Bell Pepper
- 2 pkg. (14oz) Coleslaw mix
Sauce
- 2 Green Onions I use 4
- 3 Tbsp Soy Sauce ( or reduced sodium soy sauce)
- 1 Tbsp Honey
- 1-2 tsp Sriracha or hot sauce of your choice
Instructions
Egg Roll Mixture
- Heat oil in a 12" Nonstick skillet over medium heat for 3-5 minutes.
- Dice the onion.
- Add ground sausage and diced onion to the skillet and cook for 5-7 minutes.
- Break the sausage up while cooking.
- Slice top off the Red Bell Pepper and remove seeds. Small dice the Red Bell Pepper.
- Add small diced Red Bell Pepper to the skillet and cook 2-3 minutes. Stir well.
- Add both packages of coleslaw to the skillet and stir well. Cover and cook for 5-6 minutes. (the mixture will cook down)
Sauce
- Finely chop the green onions and add to a blender or food processor.
- Add Soy Sauce, honey and Sriracha to the onions and process until combined.
- Pour the sauce into the skillet and cook uncovered for 1-2 minutes until evenly combined and heated.
- Put chow mein noodles into bowls and top with egg roll mixture.
Notes
You can use rice instead of chow mein noodles.
Substitute for coleslaw mix: 1 small head of cabbage and 2 medium carrots shredded.
