Chicken Salad with Ranch Dressing
When you get tired of having Chicken for numerous meals in a row, sometimes it’s hard to decide what to do with the leftovers. If you are like I am, I don’t want to eat chicken three or four days in a row, I need a change-up. One of those change-ups comes in the form of a Chicken Salad made from leftover chicken. To me, it doesn’t matter if it’s just chicken breast or all parts of the chicken, it all makes a great Chicken Salad with tasty mixins.
I don’t normally keep Mayonaise or Miracle Whip on hand, it goes bad before I use it. But I do have Ranch dressing most of the time in the frig for all sorts of cooking or salad needs. Honey Mustard is a close second to keep on hand. I love the sweet tangy flavor not only for my salads, but to dip my fries in too. These two combos make for a delicious creamy flavor in my quick Chicken Salad made with leftover chicken breast.
Chicken Salad with Ranch Dressing
Ingredients
- 2 Cups Finely Diced Chicken
- 2 Stalks Fresh Celery
- ½ Cup Diced Onion
- ½-⅓ Cup Diced Pickles
- 1 Tbsp Pickle Juice
- ½ Cup Ranch Dressing
- 2-3 Tbsp Honey Mustard
Instructions
- Finely dice cooked chicken breast ( or chicken meat) and add to a medium-sized mixing bowl.
- Finely dice the celery stalks and add to the chicken in the mixing bowl.
- Finely dice the onion and add to the mixing bowl with the chicken and celery.
- Finely dice pickles and add to the mixing bowl.
- Add the pickle juice, ranch dressing, and honey mustard to the mixing bowl and fold until mixed well.
- Serve cold on sandwich bread, with crackers or sliced baguette.
