Brazilian Seafood Stew (Moqueca)

My husband and I both love seafood. We discovered this recipe for a Brazilian Seafood Stew and just had to try it. Shrimp, fish, bell pepper and lime are the main ingredients. The flavors are each individual in their own, delicious and outstanding. I believe the best thing about this Brazilian Seafood Stew is you can customize it to suit your own taste. Brazilian Seafood Stew (Moqueca)

Shrimp, fish, bell pepper and lime make this stew delicious and simple to cook.

Ingredients
  

  • ½ lb Cod or White Fish
  • ½ lb Raw peeled Shrimp, fresh or frozen
  • 8 fl oz Chicken or Vegetable Broth
  • ½ small bunch Cilantro
  • 1 13.5 fl oz can Coconut Milk
  • 2 cloves Garlic
  • 1 Green Bell Pepper
  • 1 Red Bell Pepper
  • 1 Lime
  • 2 Tomatoes
  • ½ medium Yellow Onion
  • Black Pepper
  • Chili-Garlic Sauce
  • Salt
  • Coconut/Olive Oil

Instructions
 

  • Wash and dry the fresh produce.
  • Zest the lime into a medium bowl. ( Reserve the lime for later use).
  • Peel and mince the garlic. Add to the medium bowl with the lime zest.
  • Add the chili-garlic sauce, salt and pepper to the medium bowl with the garlic and lime zest.
  • If your shrimp is frozen – place in a colander and run under cold water to thaw slightly and remove ice crystals if any. Place the the shrimp on a clean towel or paper towels and pat dry. Add to the marinade bowl of garlic, lime zest, salt, pepper, and chili-garlic sauce.
  • If your shrimp is thawed – just pat dry with a clean towel or paper towels and then add them to the marinade bowl.
  • Pat the Cod or White Fish dry with a clean towel or paper towels and then cut into 1-inch pieces. Add the fish pieces to the marinade bowl and gently stir to coat. Set aside.
  • Use a clean cutting board and trim, seed, and halve the bell peppers crosswise. Slice into thin strips and place into another medium bowl.
  • Small dice the yellow onion and add to the bowl with the bell peppers.
  • Preheat a medium saucepan over medium heat.
  • Once the pan is hot, add oil and swirl to coat the bottom of the pan.
  • Add the peppers and onions and a pinch of salt. Stir occasionally. Cook until just beginning to soften. About 3 minutes.
  • While the peppers and onions are cooking, medium dice the tomatoes.
  • Add the tomatoes and broth to the pan. Stir to combine. Bring to a boil over medium-high heat. Once boiling, reduce heat to medium and simmer. Stir occasionally. 3-4 minutes.
  • Shave cilantro leaves off the stems and mince the leaves.
  • Add the marinated shrimp and fish along with the coconut milk to the pan. Stir to combine. Return to a simmer and cook until the shrimp and fish is cooked through. About 1 minute more.
  • When the Seafood Stew is done, juice the reserved lime into the pan, add the cilantro and gently stir to combine.
  • Remove from heat and serve.

Lobster Mac-N-Cheese

Cheesy deliciousness along with the sweet, salty tenderness of lobster. Divine!! I used gluten free elbow noodles for my recipe. There was no difference to taste at all.
