Peach Cobbler is one of my favorite summertime sweets to enjoy. I don’t mind having my cobbler without ice cream, but my husband loves ice cream served with his. I think it’s just another excuse to eat ice cream for him!
Peaches are just part of hot summer days, they are just meant to relish and enjoy and satisfy that cooling effect desired on hot days. My Great-Uncle always made the best Peach Cobbler, and I’ve still yet to accomplish that feat. However, I found another great way to enjoy peaches in a cobbler. This makes for quick-serve for either picnics, camping, or just sitting on the patio relaxing.
Spray a large baking sheet with non-stick spray or line with parchment paper and place to the side.
Peel your peaches and then chop.
In a small mixing bowl, add the corn starch and water and whisk until smooth and no lumps.
In a large saucepan over medium heat, add the peeled and chopped peaches with the sugar, lemon juice, and the cornstarch mixture. Stir continuously while cooking and until the peach mixture is bubbly and thickened. Remove from the heat and stir in the vanilla.
In another small mixing bowl, beat the egg .
Melt the butter in its own dish.
In a separate mixing dish, mix the brown sugar and cinnamon together well.
To prepare your eggroll wrap; add about 2 TBSP of the peach mixture onto the center of the eggroll wrap. Brush the beaten egg around the edges of each wrap to make sure your eggroll seals. Fold in the sides and roll up the eggroll tightly.
Brush the eggroll with the melted butter and then roll in the brown sugar and cinnamon mixture.
Place the peach cobbler eggroll onto the baking sheet. Bake for about 20 minutes or until golden brown. Turn half way through the baking time.
Serve with the Vanilla Icing and Powdered Sugar, or Ice Cream if desired.
Vanilla Icing
In a small bowl, combine the confectioners sugar, milk and vanilla extract together.
Mix well until smooth.
Drizzle over the peach cobbler eggrolls after slightly cooled.
