My mom gifted me a whole gallon sized plastic bag full of recipes that she has accumulated over the years. I’ve decided to share these here in hopes that some of these will be enjoyed by my readers and bring something new to their tables. Not all of these have been prepared by me, but I’ll let you know which ones I have as we progress along. Enjoy!

Pumpkin Bars with Ready to Spread Cream Cheese Frosting

As Autumn approaches, so does the pumpkin season. I love a delicious pumpkin pie, pumpkin roll, pumpkin bread and especially pumpkin bars. There’s something about the pumpkin and cream cheese icing that just goes together. Pair those along with a fresh hot cup of coffee and I’m in food heaven.

I don’t fix these enough because I’d probably end up in heaven sooner than I’d like from over indulgence or premature death from obesity due to all the good food! (Is it just me, or does anyone else just want to eat all the good food?). These pumpkin bars are not difficult to make and most of the ingredients you’ll have on hand for the fall and winter holiday season anyhow.

Pumpkin Bars with Ready to Spread Cream Cheese Frosting

As Autumn approaches, so does the pumpkin season. I love a delicious pumpkin pie, pumpkin roll, pumpkin bread and especially pumpkin bars. There's something about the pumpkin and cream cheese icing that just goes together.

Cook Time 30 minutes
Cool Time 1 hour
Total Time 1 hour 40 minutes

Ingredients
  

  • 2 Cups All Purpose Flour
  • Cups Packed Brown Sugar
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tsp Pumpkin Pie Spice
  • ¼ tsp Salt
  • ½ Cup Vegetable Oil
  • ½ Cup Apple Juice
  • 1 15 oz Can Pumpkin (Not pumpkin pie mix)

Frosting

  • 1 16 oz Container Cream Cheese ready to Spread Frosting.

Instructions
 

  • Preheat oven to 350°F.
  • Grease and lightly flour a 15X10X1 inch pan.
  • In a large mixing bowl, add all the pumpkin bar ingredients.
  • If using an electric mixer, mix on low speed until just moistened. Then mix on medium speed for 2 minutes.
  • Spread pumpkin bar batter in greased and lightly floured pan.
  • Bake for 20-30 minutes or until center comes out clean on toothpick.
  • Cool completely – about 1 hour.
  • Spread the Cream Cheese ready to spread frosting over the cooled pumpkin bars.
  • Refrigerate about 30 minutes to set.
  • Serve chilled.
  • Store leftover pumpkin bars in the refrigerator, covered.

Notes

Optional: Sprinkle chopped nuts on top of the ready to spread cream cheese frosting.
