Chicken Salad with Ranch Dressing

When you get tired of having Chicken for numerous meals in a row, sometimes it’s hard to decide what to do with the leftovers. If you are like I am, I don’t want to eat chicken three or four days in a row, I need a change-up. One of those change-ups comes in the form of a Chicken Salad made from leftover chicken. To me, it doesn’t matter if it’s just chicken breast or all parts of the chicken, it all makes a great Chicken Salad with tasty mixins.

I don’t normally keep Mayonaise or Miracle Whip on hand, it goes bad before I use it. But I do have Ranch dressing most of the time in the frig for all sorts of cooking or salad needs. Honey Mustard is a close second to keep on hand. I love the sweet tangy flavor not only for my salads, but to dip my fries in too. These two combos make for a delicious creamy flavor in my quick Chicken Salad made with leftover chicken breast.

Chicken Salad with Ranch Dressing

Quick and Easy Chicken Salad from leftover chicken breast

Ingredients
  

  • 2 Cups Finely Diced Chicken
  • 2 Stalks Fresh Celery
  • ½ Cup Diced Onion
  • ½-⅓ Cup Diced Pickles
  • 1 Tbsp Pickle Juice
  • ½ Cup Ranch Dressing
  • 2-3 Tbsp Honey Mustard

Instructions
 

  • Finely dice cooked chicken breast ( or chicken meat) and add to a medium-sized mixing bowl.
    Diced Chicken
  • Finely dice the celery stalks and add to the chicken in the mixing bowl.
    Diced Celery
  • Finely dice the onion and add to the mixing bowl with the chicken and celery.
  • Finely dice pickles and add to the mixing bowl.
  • Add the pickle juice, ranch dressing, and honey mustard to the mixing bowl and fold until mixed well.
    Chicken Salad
  • Serve cold on sandwich bread, with crackers or sliced baguette.

Notes

You can add salt and pepper to taste. 
For a kick – try adding cayenne pepper or diced jalapenos. 
This is such a versatile recipe, you add just about anything to change up the taste.

As an 8 year old and with my first cookbook, this was the very first recipe I remember creating. And often. This was especially a really quick and easy meal to enjoy during the hot summer months in the Texas heat. My mom always had
