Tuscan Creamy Chicken w/Mushrooms, Spinach and Cherry Tomatoes

I’ve discovered some quick, affordable recipes for Mediterranean Styled meals. This one is especially delicious. It definitely lives up to its name: Tuscan Creamy Chicken with Mushrooms, Spinach and Cherry Tomatoes. The creamy sauce is rick and thick from heavy whipping cream and the parmesan cheese adds a nutty flavor that I could just drink. I’m not a tomato fan, but the Italian Seasoning along with the onions and garlic make these cherry tomatoes taste like pizza sauce as they pop in your mouth.

The next time I make this dish, I will make some rice to serve with it. The cream sauce needs something to sop it up. My husband thinks this is his next Chicken and Rice recipe, that’s how much he loves it. He likes tomatoes less than I do.

Creamy Tuscan Chicken

This whole dinner takes about 30-40 minutes all together from start to finish. Tuscan Creamy Chicken with Mushrooms, Spinach and Cherry Tomatoes will become one of your favorite meals.

Ingredients
  

  • 1 lb Chicken Thighs boneless or bone-in
  • ½ Medium Yellow Onion
  • 1 Clove Garlic
  • ½ lb Cremini Mushrooms
  • ½ 5 oz pkg Baby Spinach
  • ½ Pint Cherry or Grape Tomatoes
  • 4 oz Heavy Whipping Cream
  • 1 oz Parmesan Cheese
  • ¼ tsp Black Pepper
  • ¼ tsp Crushed Red Pepper
  • ½ tsp Italian Seasoning
  • ¼ tsp Salt
  • 1 TBSP Unsalted Butter

Instructions
 

  • Wash and dry the fresh produce.
  • Peel and finely dice onion.
  • Peel and mince garlic.
  • Heat a large skillet over medium heat.
  • As the skillet heats up, use a paper towel and pat dry the chicken thighs.
  • Place dried chicken thighs on a plate or board.
  • Season chicken thighs with Salt and Pepper on both sides.
  • Once the pan is hot, add 1 TBSP butter and coat the bottom of the pan.
  • Add onion and garlic and cook until onion begins to soften, about 2-3 minutes. Stir often/regularly.
  • Add chicken thighs to the skillet and cook until golden brown. About 2 minutes per side.
  • Once chicken thighs are golden brown, remove them to a plate and cover loosely with aluminum foil. The chicken will not be thoroughly cooked all the way.
  • While the chicken thighs are browning, slice the mushrooms if they did not come pre sliced.
  • Add the mushrooms to the skillet along with the onions and garlic and cook until they are golden brown. About 2-3 minutes.
  • Add the fresh spinach by handfuls and wait until wilted before adding more.
  • Add the Cherry Tomatoes and the spices to the skillet and stir well to combine.
  • Cook vegetables until they begin to soften. About 2-3 minutes.
  • Pour in the Heavy Whipping Cream and mix to combine well.
  • Return the chicken thighs back to the skillet along with juices from the plate.
  • Cover and simmer until chicken is cooked through. 8-10 minutes.
  • Finely grate the Parmesan cheese.
  • Once the chicken is cooked, add the cheese and stir to combine well.
  • Serve the chicken and spoon the vegetables and creamy sauce on top.
  • Top with shaved Parmesan Cheese for more flavor.

Notes

You can serve rice or noodles along with this dish to help sop up the sauce.
